Drumstick leaves are called a superfood and it is filled with lots of nutrients. They have many health benefits such as strengthening bones, boosting immunity, and being good for lactating mothers.

Nowadays these green superfoods gained popularity and can be seen in menus of popular restaurants. You know, these beautiful superfood drumstick leaves are few steps away from my doorsteps. There is a huge tree with lots of branches with feathery leaves and fruits hanging all year round. Drumstick leaves are one of my favourite green leafy veggies and I often make drumstick leaves sambar, moringa paratha, nugge soppu dosa, moringa dal , drumstick leaves egg bhurji etc…

But the major headache of these tiny leaves is separating them from the stalk. As a result, many people avoid buying it thinking of the work involved in cleaning it. Yes! the cleaning process is a bit messy time consuming but the end result and health quotient deserve it. Actually, there is an easy method to remove the leaves. Roll the drumstick leaves in a newspaper or thin cotton cloth and keep it overnight. Later you will find that most of the leaves have been shed by themselves and beyond that, it is easy to clean.

Ingredients

  • 2 bunches drumstick leaves
  • 15 numbers jackfruit seeds peeled
  • 1 cup coconut grated
  • 1 onion chopped
  • 4 green chilli
  • ¼ tsp turmeric powder
  • salt to taste
  • oil for cooking

Instructions

  • Wash the drumstick leaves thoroughly in enough water and separate the leaves from the stalk. Keep this ready before you start.
  • Take 15 jackfruit seeds and peel their skin. Transfer peeled jackfruit seeds into a pressure cooker and add salt and little water.
  • Pressure cook 1 whistle and let it cool down for 10 minutes.
  • Take out the jackfruit seeds on a plate and crush them gently into small pieces and keep it aside.
  • Heat kadai and add 3 tbsp of oil and 2 chopped onions, 4 chopped green chilli.
  • Saute all on medium flame until onions turn soft.
  • Add moringa leaves and salt to taste, ¼ tsp turmeric powder and mix well.
  • Cover and cook 5 minutes on medium flame.
  • Further, add crushed jackfruit seeds and one cup grated coconut and mix well.
  • Cover and simmer on low flame for 2 minutes.
  • Serve nugge soppu palya as a side dish with rice and dal.

Notes

  • Use fresh tender drumstick leaves, else they might be a little bitter.
