Nothing can beat the taste and pristine aroma of this fresh and natural kokum sharbat prepared in your own kitchen. This healthy drink prepared mainly from the kokum fruit or Garcinia indica.

what is kokum:

kokum is scientifically known as Garcinia indica, commonly known as kokum. It is primarily growing in western ghats, especially the goa and konkan region. It is a small fruit like a cherry tomato. When they are tender, they are green in colour. As they start ripening turns to red in colour and deepens to purple on well ripening. The seeds of the fruit have a white coloured fleshy coating on them when the fruit becomes very ripe, its colour changes to a bit transparent. These seeds are edible, when they ripe it has an agreeable flavour and sweetish acid taste.

The outer purple skin and inner seeds are sun-dried separately. Sun-dried kokum skin is often used as a souring agent or as an additive in foods. Apart from being used in cooking, it is widely used to make sumptuous kokum sharbat. You can store dried kokum in an airtight container for about a year. The sun-dried seeds are used to make kokum oil/butter. kokum oil is edible and can also be used for things other than cooking. It is widely used in the cosmetics industry to make lipsticks, balms and skin lotions.

I personally, big fan of kokum fruit and especially the sour leaves from the kokum tree. Even the leaves are edible and can make tempting kokum tender leaves chutney from leaves too. I have got very fond memories of playing under this tree with my siblings and neighbourhood kids while growing up. There is a huge tree in our backyard. We all would climb the tree to pluck the ripe fruits, we would eat most of it there itself and carry a few to home.

Ingredients

  • 15 dry kokum/ bhirand / muragalu / punarpuli / kaatampi,
  • ½ cup sugar
  • 4 cup water
  • pinch of salt
  • 1 tsp soaked chia seed(optional)

Instructions

  • Firstly in a large bowl, take dried kokum and add one cup of water, sugar and a pinch of salt.
  • Soak for one overnight or 2 to 3 hours with warm water.
  • Squeeze well – soaked kokum and strain into a large bowl. Now concentrated kokum juice is ready.
  • To make juice from kokum concentration add 3 cups of water to the kokum concentration.
  • Adjust the sugar and water depending on the sourness of kokum.
  • Take few ice cubes in a glass and add soaked chia seeds.
  • Finally, pour prepared kokum juice and serve chilled fresh homemade kokum juice.

  • Sugar can be replaced with jaggery or honey.

How to make kokum sharbat recipe with step by step photo:

  • Firstly, in a large bowl take 15 dried kokum.
  • Add 1/2 cup of sugar
  • Add pinch of salt and one cup of water, mix well.
  • Soak for one overnight or 2 to 3 hour with warm water.
  • squeeze well soaked kokum.
  • Strain into large bowl, now concentrated kokum juice is ready.
  • Further, add 3 cups of water and adjust the sugar depending on the sourness of kokum.
  • Finally, add a few ice cubes and 1 tsp of soaked chia seeds, pour prepared kokum juice into a glass and serve chilled fresh kokum juice.
