Drumstick leaves are called a superfood and it is filled with lots of nutrients. They have many health benefits such as strengthening bones, boosting immunity, and being good for lactating mothers. Nowadays these green superfoods gained popularity and can be seen in menus of popular restaurants. You know, these beautiful superfood drumstick leaves are a few steps away from my doorsteps. There is a huge tree with lots of branches with feathery leaves and fruits hanging all year round. Drumstick leaves are one of my favourite green leafy veggies and I often make drumstick leaves sambar, nugge soppu dosamoringa dal, nugge soppu palya etc…

Ingredients

  • cup moringa/drumstick leaves
  • 2 cup wheat flour
  • ½ cup chickpea/besan flour
  • 1 tsp ginger garlic paste
  • 1 green chilli chopped
  • 1 tsp cumin seed
  • 1 tsp ajwain/carrom seed
  • 1 tsp red chilli powder
  • 1 tsp turmeric powder
  • salt to taste
  • oil or ghee

Instructions

  • firstly, pick the drumstick leaves and separate the moringa leaves from the stalk and wash them thoroughly.
  • then lightly squeeze out the water and finely chop the drumstick leaves.
  • take a mixing bowl, add 1½ cup of chopped moringa leaves, 2 cups of wheat flour and ½ cup of chickpea flour.
  • further, add 1 tsp ginger garlic paste, 1 chopped green chilli, 1 tsp cumin seed, 1 tsp ajwain, 1 tsp red chilli powder, 1 tsp turmeric powder, salt and t tbsp of oil.
  • now add some water and keep kneading till you get the smooth dough. the dough should be tight and firm.
  • grease the dough with little oil and rest for 15 minutes.
  • next, make a lemon sized ball from the dough.
  • roll the paratha semi-thick/thin by dusting some dry flour.
  • heat tawa/skillet on medium heat and place the paratha and let it cook.
  • once you see the bubbles, flip onto the other side and drizzle oil or ghee on the top.
  • flip again and drizzle oil or ghee on the other side as well. roast till they have nice golden spots on both sides.
  • serve paratha with curd or raitha or pickle or ketchup or any gravy of your choice.
