I personally love eggs. Indian egg bhurji is my favourite because it’s simple to cook and tastes so delicious. This is one of my favourite ways to eat moringa leaves. I add eggs to moringa leaves and make a scramble. It’s so tasty and goes well as one of the side dishes with rice and chapati.

Egg bhurji with drumstick leaves is one of the most popular dishes in South India. Moringa leaves are abundantly found in South India in every home background. So we add fresh moringa leaves in many of our recipes. I often make drumstick leaves sambar, nugge soppu palya, moringa paratha etc…

Ingredients

  • bunches of nugge soppu/moringa/drumstick leaves
  • 3 onion finely chopped
  • 5 green chilli
  • 6 eggs
  • ¼ tsp turmeric powder
  • salt to taste
  • oil for cooking

Instructions

  • separate the moringa leaves from the stalk and wash them thoroughly.
  • heat oil in a wok. add 3 finely chopped onion and 5 chopped green chilli. saute well on medium flame until soft.
  • add drumstick leaves, salt to taste and ¼ tsp of turmeric powder. mix well.
  • cover and cook for 2 minutes on low flame.
  • add 6 eggs and don't stir. cover with a lid and cook for 1 minute on medium flame.
  • now open the lid and scrumble the eggs until they are scrambled completely.
  • delicious drumstick leaves egg stir fry is now ready for serve.

Notes

  • some varieties of drumstick leaves have mild bitterness on its own.
  • remove the stalks from the leaves as they are hard to eat and digest.

How to make Cheese Bread Omelette with step by step photo:

  • separate the moringa leaves from the stalk and wash them thoroughly.

  • add drumstick leaves, salt to taste and ¼ tsp of turmeric powder. mix well. cover and cook for 2 minutes on low flame.
  • add 6 eggs and don’t stir. cover with a lid and cook for 1 minute on medium flame.
  • now open the lid and scrumble the eggs until they are scrambled completely.
  • delicious drumstick leaves egg stir fry is now ready for serve.
