Thagate soppu is nothing but, cassia tora or senna tora in English. It is called ‘tajank’ in tulu. It commonly grows profusely like weeds everywhere, with the onset of monsoon in coastal Karnataka. This monsoon herb is a very useful plant and is mostly ignored by all. Leaves of these cassia tora plants are used as medicine, but their seeds are also used widely in Ayurveda.

Tajank sukka is a very famous monsoon delicacy seen in Mangalorean cuisines. As the thagate soppu available plenty in monsoon. We do prepare so many mouth-watering delicacies like, tagate soppu pathrode, tajank neer dose, tajank vade and simple tajank sukka. Only the tender leaflets of the top two branches of each cassia tora plants are used in dishes. As tora leaves mature they tend to get bitter in taste.

Ingredients

  • 2 bunch Tagate/Tajankk/Cassia Tora tender leaflets
  • 15 number jackfruit seeds peeled
  • 2 onion sliced
  • 5 green chilli chopped
  • 1 cup coconut grated
  • ¼ tsp turmeric powder
  • salt to taste
  • oil for cooking

Instructions

  • Clean the cassia tora leaves, remove stalks, use only tender leaves. Rinse leaves in water, chop the leaves very finely and keep it aside.
  • Take 15 jackfruit seeds and peel their skin. Transfer peeled jackfruit seeds into a pressure cooker, add salt to taste and little water to cook.
  • Pressure cook 1 whistle. Let it cool down.
  • Take out the cooked jackfruit seeds on a plate and crush gently into small pieces.
  • Heat pan, add 3 tbsp oil.
  • Add 2 sliced onions and 5 green chillies, saute until soft.
  • Add chopped cassia tora/tagate soppu, add salt to taste, ¼ tsp turmeric powder and mix well.
  • Cover and cook 7 to 8 minutes or until leaves become soft on medium flame.
  • Add crushed jackfruit seeds and 1 cup grated coconut, mix well.
  • Cover and simmer for 2 minutes on low flame.
  • Tajank sukka ready to serve. Serve with rice as a side dish or with chapathi.

Notes

  • Only the tender leaflets of the top 2 branches of each cassia tora plant are used in dishes. As tora leaves mature they tend to get bitter in taste.
  • Adding green chilli can be adjusted as per your taste.
  • If you don’t have access to cassia tora/tagate/tajank soppu, instead you can use chopped moringa/drumstick or methi/fenugreek leaves as well.
