Nugge Soppu Motte Palya | Drumstick Leaves Egg Burji

If your favourite way to cook and eat eggs is a scramble then here is one new idea to make it more healthy using a superfood, Drumstick leaves or Moringa Leaves. It is a quick, tasty and nutritious egg stir fry made with fresh moringa leaves and spices.

  • bunches of nugge soppu/moringa/drumstick leaves
  • 3 onion finely chopped
  • 5 green chilli
  • 6 eggs
  • ¼ tsp turmeric powder
  • salt to taste
  • oil for cooking


  • separate the moringa leaves from the stalk and wash them thoroughly.
  • heat oil in a wok. add 3 finely chopped onion and 5 chopped green chilli. saute well on medium flame until soft.
  • add drumstick leaves, salt to taste and ¼ tsp of turmeric powder. mix well.
  • cover and cook for 2 minutes on low flame.
  • add 6 eggs and don't stir. cover with a lid and cook for 1 minute on medium flame.
  • now open the lid and scrumble the eggs until they are scrambled completely.
  • delicious drumstick leaves egg stir fry is now ready for serve.



  • some varieties of drumstick leaves have mild bitterness on its own.
  • remove the stalks from the leaves as they are hard to eat and digest.
